Use frozen cherries sweetened with coconut sugar for this rustic galette. The flaky crust is made using coconut oil. TOTAL TIME 1 hour 10 minutes • SERVES 8 INGREDIENTS 2 cups frozen dark sweet cherries 2 cups frozen tart cherries 1⁄2 tsp. almond extract 1⁄2 cup coconut sugar 3 Tbsp. Fresh Thyme tapioca flour starch 1 1⁄3 cups Fresh Thyme unbleached all-purpose white flour 1⁄2 tsp. Fresh Thyme sea salt 1⁄3 cup coconut oil, at room temperature 5 Tbsp. ice cold water, plus more, as needed 1 Fresh Thyme large egg 1 Tbsp. water 1⁄3 cup Fresh Thyme Organic Unsweetened Coconut Chips, toasted* INSTRUCTIONS 1. In a large bowl, combine sweet cherries, dark cherries, and almond extract. In a small bowl, whisk together coconut sugar and tapioca flour starch. Add coconut sugar mixture to cherries; toss to combine. Set aside. 2. For pastry dough, in a medium bowl, stir together flour and salt. Using a pastry blender, cut coconut oil into flour mixture until pieces are pea size. 3. Sprinkle 2 Tbsp. water over flour mixture. Gently toss mixture with a fork. Add additional water, 1 Tbsp. at a time, gently tossing with a fork, until dough is moistened enough to form a ball. Shape dough into a 6-inch disk. 4. Preheat oven to 375°F. Line a rimmed baking pan with parchment paper. Flour surface of dough. Using a rolling pin, roll dough between two pieces of waxed paper into a 12-inch circle that is 1/8-inch thick. Transfer pastry to prepared pan. Peel off waxed paper. 5. Place cherry mixture in center of dough, leaving a 2-inch border around the edges. Fold edges of dough up over filling, pleating, as needed. In a small bowl, beat egg and water. Brush egg over edges of dough. 6. Bake for 40 to 45 minutes or until golden brown. Cool. Top tart with toasted coconut.
