Pizza lovers, gather round. Cauliflower-crust pizza is a table changer. Healthier crust options—such as those made with zucchini, sweet potato, beet, or quinoa—have been making their way into today’s pizza pies, with cauliflower a favorite. It’s tasty. It’s rich in vitamins—especially vitamin C. It cuts the calories and, of course, provides a crust option without wheat. It’s not perfect though. Cauliflower dough can be soggy, so wring out the moisture as well as you can. Finish it off with your favorite ingredients, just as you would any pizza. As for flavor fulfillment and feel-good benefits, though, it’s hard to top. CAULIFLOWER CRUST Riced cauliflower makes this crust an easier- than-ever gluten-free option for pizza. TOTAL TIME 1 hour • SERVES 4 INGREDIENTS Non-stick cooking spray 3 (12 oz.) bags Fresh Thyme frozen riced cauliflower 3 Fresh Thyme large egg whites ⅔ cup shredded Parmesan cheese 1⁄2 tsp. Fresh Thyme fine sea salt INSTRUCTIONS 1. Preheat oven to 4000F. Line a baking sheet with parchment paper and coat with cooking spray; set aside. 2. Place cauliflower in a large microwave- safe bowl. Cover and microwave on high for 10 to 12 minutes or until soft, stirring occasionally. Cool slightly. Wrap cauliflower in a clean, dry kitchen towel and wring out moisture. Return cauliflower to bowl. 3. In a medium bowl, combine egg whites, Parmesan, and salt. Add to the cauliflower. Stir to combine, then place on prepared pan. Pat with hands into a 12-inch round. 4. Bake for 25 minutes or until firm in center and light golden brown. Add toppings as desired, and bake for 5 minutes. Prosciutto and Arugula Pizza: Spread Alfredo sauce (see ingredient amounts, right) over the crust. Top with thinly sliced red onion, thin strips prosciutto, and coarsely crumbled goat cheese. Bake 5 minutes. Top with arugula, thinly sliced Mission figs, and chopped sun- dried tomatoes. Cut into four slices.
