Strawberry Pavlovas This airy meringue dessert from Australia is light on its feet, which is why they named it after a ballerina. total time about 3½ hours • serves 8 INGREDIENTS 3 Fresh Thyme large eggs ½ tsp. cream of tartar or 1 tsp. Fresh Thyme white wine vinegar ⅛ tsp. Fresh Thyme fine sea salt ¾ cup sugar 1 Tbsp. strawberry-flavored glaze or topping, such as Marzetti Glaze for Strawberries (plus more for drizzling, optional) 1 cup coconut whip or regular whipped topping 2 cups thinly sliced fresh strawberries 4 peeled kiwi, chopped Fresh mint leaves, for garnish INSTRUCTIONS 1. Preheat oven to 225°F. Line a baking sheet with parchment paper. 2. For the meringue, separate egg yolks from the egg whites; reserve yolks for another use. Combine the whites, cream of tartar, and salt in a large bowl and beat together with a hand mixer or stand mixer on medium speed until glossy. With the mixer on high, beat in sugar ¼ cup at a time until fully incorporated. Continue to beat egg mixture until it can hold stiff peaks. Fold in strawberry-flavored glaze until fully incorporated. 3. Spoon meringue onto prepared baking sheet into eight 4-inch-diameter mounds. Use spoon to shape and make a well in each mound. Bake 1 hour or until meringues are set; turn oven off and leave meringues in oven 2 hours. Transfer to a cooling rack and let stand until cool. Meringues can be used immediately or stored in a container with a tight-fitting lid for up to 2 days. 4. To serve, top meringues with coconut whip, strawberries, and kiwi. Spoon glaze over fruit, if desired, and garnish with mint.
