THE FARMING LIFE Vern’s chef beginnings developed strong roots for the herb business. He learned a lot about food and the role of herbs by working in his family’s restaurant. After college, he worked in kitchens at fine hotels and restaurants. However, when Vern bought a half-acre “farmette” in Wauconda, he still needed a way to grow an herb enterprise from his humble start. While scratching for herb- growing ideas, he discovered hydroponics—growing plants in nutrient-rich water. “I started in my basement,” Vern says. “I read a lot and learned by trial and error. We started growing edible flowers, chives, basil—all sorts of stuff. When I had extra herbs, I’d give them to my chef buddies. After about six months of that, I realized I had a business.” A GROWING BUSINESS Before long, Vern was selling herbs and vegetables to grocery stores. He also qualified for an organic farming designation from the federal government, before that was trendy. The secret to farming is knowing consumers’ tastes, Vern says. The current best seller? Basil, at 45 percent of his sales. Meyer Farms has branched out beyond Illinois to Florida and Mexico. By spreading regionally, the farm’s harvest is more likely to avoid weather problems. It also helps him keep up with demand. “We continually plant and harvest. We’re always seeding one type of plant, while maintaining other kinds. Farming is a never-ending game,” Vern says.
